A rich and creamy frosting filled with pecans and coconut.
1 12 oz can evaporated milk
1 1/2 cups sugar
4 large eggs yolks (or 5 small)
3/4 cup butter or margarine
1 1/2 tsp vanilla
2 cups shredded, sweetened, coconut
1 1/2 cups chopped pecans
In medium sauce pan (not on stove) whisk together milk, sugar and eggs yolks. Add butter and cook on medium high heat. Cook and stir til thickened. Remove from heat and add vanilla, coconut, and pecans.
Let cool 15 minutes before frosting cake
