Homemade meatballs in a sweet and sour sauce. Add in the pineapple tidbits and some frozen peas to finish it all off.
Meatball Ingredients
2 lbs ground beef
1 small onion (grated or diced)
2 eggs
1 tsp salt
1/8 tsp pepper
2 Tbsp soy sauce
1/4–1/2 cup to dip meatballs in before frying
2–3 Tbsp oil to fry meatballs
Sauce Ingredients
juice from pineapple tidbits
1/2 cup sugar
1/4 cup cornstarch
1 1/2 tsp apple cider vinegar
Finishing Touches
1/2 can pineapple tidbits (drained)
2 cups frozen peas
Served with cooked rice
Mix first five ingredients for meatballs. I like to mush it all together with my hands. Turn on frying pan and add 2-3 Tbsp oil. Form 1 Tbsp meatballs using Tbsp or small cookie scoop. Place 1/4-1/2 cup soy sauce in shallow dish and roll meatballs in before adding to hot frying pan. Cook meatballs approximately 5 min on each side till cooked through. Remove meatballs and set aside. Mix sauce ingredients and pour into frying pan and whisk to release fond from bottom of frying pan. Continue to cook till sauce thickens and becomes translucent. Add meatballs, pineapple tidbits, and peas to sauce and stir to coat. Serve over cooked rice
